Three things we make from the milk of goats grazing around Lake Śniardwy. It all starts with the morning milking and ends in the maturing chamber — or on the plate the same day. All of it available at the farm or by phone arrangement.
01 · Fresh
Made the same day we milk the goats. We inoculate the milk with cheese cultures, then add rennet an hour later. We cut the curd with a knife, transfer it to moulds, and wait for the whey to drain. After a day, the cheese is ready.
Natural, no herbs, no spices. Mild, faintly sour in the cross-section, with a crumbly texture. Best fresh — in the first two or three days after making. With bread, with jam, with honey, with a pinch of salt.

We make fresh cheese every few days. Best to call — we'll check how much is left.
02 · Aged
After forming, the cheeses go into brine — water with sea salt. Small wheels spend a few hours in it, larger ones a full day. From there onto beech shelves in the cool, humid chamber next to the dairy.
Each cheese matures for about sixty days — some shorter, some longer, depending on the season and how the rind develops. We turn every wheel daily, sometimes twice a day.
We sell from the whole wheel — cut in front of you, or the whole wheel, wrapped in stamped paper.

Reservation
It matures for sixty days, so availability shifts with the season. Arrange by phone and we'll set a wheel aside for you.
03 · Milk
Most of the morning milk goes straight to the dairy — some for fresh cheese, some to the vats for the aged. Whatever we don't use that day can be ordered by the bottle.
Milk with no pasteurisation, no additives — just as it comes from goats grazing at the edge of the forest.

Process
Two methods — a short five-step one for the fresh, an eight-step one for the aged.
In season we're out in the field or in the dairy — one call the day before sorts out most things.
